Juiciness is common trait of fruits, which is a critical factor in determining its acceptance among consumers. Other foods have similar desirable characteristics – i.e. succulence.
This texture is effectively measured by compression using the FTC succulometer cell. The fixture squeezes the moisture from the food – juice, oils or other liquid components.
The fixture comprises a heavy-duty cylindrical vessel to present the sample, usually as a bulk analysis, and a corresponding close-tolerance piston. The cylinder part of the fixture is fitted with a spout to allow free expressed moisture to be drained and so referenced as an indicator of the product’s succulence, by measurement of weight or volume.
The cylinder has a diameter of 2-1/4 inches and is 3-1/8 inches high with a volume of 1.4 cubic inches. The plunger’s close-fitting dimensions ensure compression rather than extrusion.

The cylinder part of the fixture is fitted with a spout to allow free water expressed during testing to be expelled and weighed as an indicator of sample succulence. For use with 1000N and 2500N load cells with dove tail adaptor or FTA force transducers.
