Juiciness is common trait of fruits, which is a critical factor in determining its acceptance among consumers. Other foods have similar desirable characteristics – i.e. succulence.
This texture is effectively measured by compression using the FTC succulometer cell. The fixture squeezes the moisture from the food—juice, oils or other liquid components—for further analysis.
The fixture comprises a heavy-duty cylindrical vessel to present the sample, usually as a bulk analysis, and a corresponding close-tolerance piston. The cylinder part of the fixture is fitted with a spout to allow free expressed moisture to be drained and so referenced as an indicator of the product’s succulence, by measurement of weight or volume.
The cylinder has a diameter of 2-1/4 inches and is 3-1/8 inches high with a volume of 1.4 cubic inches. The plunger’s close-fitting dimensions ensure compression rather than extrusion.
